Aloo Cheese Croquettes ( Kebabs and Tikkis Recipes)

Preparation Time:

Makes 6 crouquettes
 

Ingredients


To Be Mixed Into A Cheesy Stuffing
2 tbsp grated mozzrella cheese
2 tbsp grated processed cheese
3 tbsp chilli-garlic sauce

Other Ingredients
4 cups boiled and mashed potatoes
salt to taste
1/2 tsp freshly ground black pepper powder
1/2 cup plain flour (maida)
3/4 cup bread crumbs for rolling
oil for deep-frying

Method
  1. Combine the potatoes salt and pepper in a bowl and mix well.
  2. Divide this mixture into 6 equal portions and shape each portion into a small round.
  3. Press a little in the center of each round to make a depression. Place 1 tsp of the cheesy filling in the depression and again shape them into cylindrical croquettes.
  4. Combine the plain flour with 3/4 cup water and mix well, till no lumps remain.
  5. Dip each croquette in the plain flour-water mixture and roll in the bread crumbs till it is evenly coated from all the sides.
  6. Heat the oil in a kadhai on a medium flame, and deep-fry the croquettes till they are golden brown in colour from all sides. Drain on an absorbent paper and serve hot.

Method
  1. Combine all the ingredients, add 2 tbsp of water and blend in a mixer till smooth.
  2. Transfer to a bowl, add 1/2 cup of water and mix well. Use as required or store in an air-tight container in a deep-freezer.

Cappuccino Doughnuts by Tarla Dalal

Makes 8 doughnuts. 

Ingredients


To be mixed into a topping
1/2 cup castor sugar
1 tbsp cocoa powder
1/2 tsp cinnamon (dalchini) powder

Other ingredients
oil for frying


For the doughnuts
1 cup plain flour (maida)
2 tsp fresh yeast ,crumbled
1/2 cup milk
3 tbsp sugar
1/2 tsp salt
1/2 tsp vanilla essence
1 tbsp butter, softened

Method
For the doughnuts

  1. Combine all the ingredients except the butter in a bowl and knead into a soft dough.
  2. Add the butter and knead again till the dough is smooth and elastic (approx. 3 to 5 minutes).
  3. Cover with a wet muslin cloth and allow it to prove until it doubles in volume (approx. 15 to 20 minutes).
  4. Press the dough lightly to remove the air.
  5. Roll out the dough into a sheet of 6 mm. (1/4") thickness.
  6. Cut out 75 mm. (3") diameter circles with a cookie cutter and using a very small cookie cutter, cut out th centre portion of each circle, to create a hole in the centre.
  7. Knead the left-over portion of the dough lightly and repeat steps 5 and 6.
  8. Cover with a wet muslin cloth till the doughnuts double in volume again (approx. 5 to 10 minutes).

How to proceed

  1. Lift carefully and deep fry in hot oil oven a medium flame until both sides are golden brown.
  2. Drain on absorbent paper and place on a serving palte.
  3. Dust the castor sugar mixture generously on top of the doughnuts.
  4. Serve immediately.
Tips
  1. VARIATION : Chocolate Doughnuts
  2. You can also coat the doughnuts with melted chocolate as shown in the picture.

Apple and Cheese Toasts

Makes 4 toasts

Ingredients


2 tsp butter
4 whole wheat bread slices
1/2 cup grated apples
4 tbsp grated mozzrella cheese for the topping
2 tbsp grated carrot for the topping

Method
  1. Apply ½ tsp butter on each bread slice and keep aside.
  2. Place the bread slices, with the buttered sides facing upwards, on a clean flat surface and spread 2 tbsp of apples evenly on each slices.
  3. Sprinkle 1 tbsp of cheese and 1½ tsp of carrots over each slice and bake them in a pre-heated oven at 200°C (400°F) for 5 to 7 minutes or till the cheese melts.
  4. Serve hot.

Edamame, Red Pepper and Corn Salad

Ingredients

  • 2 tsp (10 mL) sodium-reduced soy sauce
  • 1 tsp (5 mL) toasted sesame oil
  • 1 tsp (5 mL) liquid honey
  • 1 clove garlic, minced
  • 1 cup (250 mL) frozen edamame, thawed and drained
  • 1 cup (250 mL) diced sweet red pepper
  • 1/2 cup (125 mL) frozen corn kernels, thawed and drained

Preparation

In bowl, whisk together soy sauce, sesame oil, honey and garlic until blended. Stir in edamame, red pepper and corn.

Buttercream Frosting Recipe

Ingredients

  • 1 cup butter, softened
  • 8 cups confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1/2 to 3/4 cup milk
  •  
  • Directions

  • In a bowl, cream butter. Beat in sugar and vanilla. Add milk until frosting reaches desired consistency. Yield: about 4 cups.
For Chocolate Frosting: Substitute 1/2 cup baking cocoa for 1/2 cup of the confectioners' sugar.  
 
For Peanut Butter Frosting: Substitute peanut butter for butter.  
 
For Lemon-or Orange-Flavored Frosting: Substitute lemon or orange juice for milk and add 1 teaspoon grated lemon or orange peel.  
 
For Almond-or Peppermint-Flavored Frosting: Substitute almond or peppermint extract for the vanilla. Liquid or paste food coloring may be added to match flavoring (green for mint, for example) or for contrast when decorating.

No eggs cake from a mix

 

Believe it or not, you can make a cake from a mix without using eggs or oil. Whether you simply don’t have any eggs or oil on hand, or if you have allergies or maybe you just want to eliminate fat from the cake, here are some quick, easy ways to have your cake and eat it too.

Ingredients

Servings: 6 to 8

Prep time: 5 minutes
Cook time: 30 to 40 minutes
  • 1 boxed cake mix
  • 2 tsp. vinegar
1 egg
  • 2 tsp. vanilla
  • 1 cups cold water
OR
  • 1 boxed cake mix
  • 1 12-oz. can soda
OR
  • 1 boxed cake mix
  • 12 oz. can pumpkin puree
  • 1/3 cup water
I cup of boiling water and mix

Method 1 of 3: Use Applesauce Instead of Eggs and Oil

Using applesauce will lower the calorie content and make the cake moist.
 
1.Grease and flour a 9” by 13” pan and preheat your oven as directed on the cake mix box.
2 Pour the cake mix into a medium mixing bowl.
3 Add the vinegar, vanilla and applesauce and mix the ingredients together.
4 Add the water.
5 Mix until it’s incorporated into the batter that’s forming.
6 Pour the batter into your prepared pan.
 
7 Smooth out the surface using a flat knife or the back of a spoon.   
8 Bake the cake as directed on the cake mix box.
9 Remove the cake from the oven and allow it to stand for 15 to 30 minutes before serving.
 

Method 2 of 3: Use Soda Instead of Eggs and Oil

In this version, you simply substitute 1 can of soda for all other ingredients.

1 Grease and flour a 9” by 13” pan and preheat your oven according to the directions on the box.
2 Pour the cake mix into a medium size mixing bowl.
3 Add the soda. (Do not add any water.) 
4 Stir the soda into the cake mix until the batter is well blended.
5 Pour the cake batter into your cake pan.
6 Bake the cake as directed on the cake mix box (usually 30 minutes).
