Who needs super fatty whipped cream or, worse, transfat- and sugar-laden “whipped topping”? News of powdered skim milk helping to reduce the incidence of painful gout flareups caused me to go in search of ways to work this cheap ingredient into recipes. This won’t fool the palate accustomed to full-fat whipped cream but it will give an option to those who are trying to reduce calories and/or inflammation.
½ cup water
½ cup instant dry milk powder
1 tbsp maple syrup
1 tsp lemon juice
½ tsp vanilla
Put water into a large bowl and place it
in your freezer. When ice crystals form around the edges remove it from
the freezer, add instant dry milk powder. Whip the mixture with electric
beaters until it is light and fluffy. Add maple syrup, lemon juice and
vanilla. Beat until thick enough to spoon like whipped topping. Use
immediately.
